This is my go to winter salad, perfect for potlucks because it holds up well for a few hours. Enjoy!
Serves 4
Ingredients
- 4 cups shaved brussel sprouts (about 10 oz whole brussels)
- 4 tbs olive oil
- 2 tbs apple cider vinegar
- 1 tsp lemon zest
- 1 tsp Dijon mustard
- “Shit tons” of black pepper
- Salt to taste
- 1/3 cup shaved manchego
- 1/2 cup pistachios
- 1/2 cup pomegranate seeds
Instructions
- Whisk together oil, AC vinegar, mustard, lemon zest, salt, and pepper and taste for seasoning. It should taste salty on its own.
- In a large bowl, combine the shredded Brussels, cheese, pomegranate seeds, and pistachios and mix in the dressing, tasting as you go to ensure the right ratio of salad to dressing.
